The aim of our project is to screen wheat varieties and breeding lines from the University of Kentucky breeding program for aroma, flavor and dough functionality in the hope that some Kentucky producers will opt to grow nontraditional varieties to meet the needs of the growing local food industry. The ultimate goal is to connect Kentucky wheat growers with millers, restaurateurs and bakers who are interested in incorporating local grains into their products and menus.
